Our apple cider vinegar is made from the perfect combination of traditional apple varieties, both sweet and tart, to naturally achieve the desired level of sweetness and acidity. Apple cider vinegar is made only from pure, fresh apple juice from the orchards in the Dunajec River Valley in Southern Poland. Nothing is added, no sugar, no water. Our apple cider vinegar requires time to go through a complex two-step process of natural fermentation and oxygenation until it reaches the ideal degree of acidity. The whole process takes several months. Our production is based on traditional methods and recipes used in the United States, Cornwall and Normandy.

In the kitchen
Use it to replace mass produced apple vinegar and experience the difference that the quality of our ingredients and proper aging has on the taste of your finished dishes. Apple cider vinegar is a universal vinegar, for all kinds of salad greens and marinades. Especially recommended for dishes made with pork, bacon, roast chicken, roast turkey and roasted vegetables. For oily fish. It complements the taste of hard, aged cheeses such as Old Amsterdam or Cheddar. Its distinct apple flavour pairs well with sage, mint, anise, cinnamon and cloves.
In the drinks cabinet
For refreshing non-alcoholic drinks, from a simple spritzer made with sparkling water, simple sugar syrup and a sprig of mint, to your own compositions of vinegar “shrubs”. Simply macerate, for example, strawberry, blueberry or tropical fruits in the vinegar for a few days, sweeten with simple sugar syrup and serve with water and ice. Non-alcoholic “shrubs” can of course be served in an alcoholic version with the addition of vodka, rum, gin, or whisky.

Every variety of Octovnia’s living vinegar has a beneficial effect on gut health, boosts immunity and improves well-being. In addition the vinegars are enriched with the specific properties of flowers, fruits and herbs from which they are made, well known in folk medicine and often used in modern herbal supplements.
Live or raw (unpasteurized) apple cider vinegar is the world's most popular vinegar used for health purposes. It is reported to improve digestion, lower blood sugar levels, improve insulin sensitivity, to curb the appetite, to lower cholesterol, to lower blood pressure and have a beneficial effect on heart health.
Drink 10 ml of vinegar a day in a small glass of water. Use it to make your own health “shots” by adding ginger, turmeric, goji berries or cranberries. Add to smoothies made with fresh fruit and vegetables instead of lemon juice.
Store tightly corked in a cool, dark place. The vinegar may be kept in the fridge, but this is not required for its safe storage.
Our living vinegar contains a culture of acetic bacteria which can cause the formation of a "mother of vinegar". This is a natural, safe and healthy process. If a mother forms in your vinegar, you can simply strain it out before use.
