The damson is an heirloom variety of plum in Poland. It is reputed to have come to Poland from Hungary. It continues to be the dominant variety grown in the orchards of Southern Poland, especially in the Dunajec River Valley. In our opinion it makes the best plum vinegar and is the only variety we use. The fruit is hand-picked in September, when the pulp is honey sweet and golden and the skins a deep purple colour. Then begins their long, two-stage fermentation, using the traditional Orleans method. Plum vinegar requires unhurried ageing to obtain a clear red colour and an intense plum aroma.

In the kitchen
Make a vinaigrette for rocket (arugula), lamb’s lettuce or fresh spinach. For dishes with pork, Parma ham, duck. It can be used to replace rice vinegar in Chinese cuisine. For dishes with apples, pears or walnuts. For dishes with wild, forest mushrooms.
Pairs well with rosemary, ginger and sesame seeds.
In the drinks cabinet
Add to cocktails made with whisky, bourbon or dark rum. For a winter-time non-alcoholic hot toddy with apple juice, honey and ginger, or in the summer with sparkling water, simple sugar syrup and a sprig of fresh rosemary.
In the medicine cabinet
Every variety of Octovnia’s living vinegar has a beneficial effect on gut health, boosts immunity and improves well-being. In addition, the vinegars are enriched with the specific properties of flowers, fruits and herbs from which they are made, well known in folk medicine and often used in modern herbal supplements.
Plum (Prunus domestica L.) has a soothing effect on the nervous system and improves well-being. It also has an antioxidant, anti-atherosclerotic effect.
Drink 10 ml of vinegar a day in a small glass of water.
Storage
Store tightly corked in a cool, dark place. The vinegar may be kept in the fridge, but this is not required for its safe storage.
Our living vinegar contains a culture of acetic bacteria which can cause the formation of a "mother of vinegar". This is a natural, safe and healthy process. If a mother forms in your vinegar, you can simply strain it out before use.
