    Item description

    In late summer ripe elderberries are hand-harvested in the Dunajec River Valley in Southern Poland. They then undergo a long, two-stage fermentation, using the traditional Orleans method. It is only after many months that we obtain a natural, live vinegar, with an intense taste and deep red-purple colour.

    Unpasteurized, unfiltered, rich in probiotics.


    Distinct, slightly tart, intense berry flavour.

    In the kitchen

    Can be used to replace balsamic vinegar in recipes. Just add a little sugar to it. Perfect for grilled vegetables. For dishes with aged, hard cheeses. In barbeque marinades (protects against the harmful substances produced when grilling over charcoal). An interesting addition to fresh figs, strawberries or honeydew melon.

    In the drinks cabinet

    Add to cocktails based on vodka, gin or sparkling wines. Makes a delicious and sophisticated non-alcoholic spritzer with sparkling water, simple sugar syrup and fresh mint leaves. Hot toddy with water and honey.

    In the medicine cabinet

    Every variety of Octovnia’s living vinegar has a beneficial effect on gut health, boosts immunity and improves well-being.  In addition, the vinegars are enriched with the specific properties of flowers, fruits and herbs from which they are made, well known in folk medicine and often used in modern herbal supplements.

    Elderberry (Sambucus nigra L.- Fructus) strengthens the immune system. It cleanses the body of toxins and harmful metabolic products. Especially recommended for patients with rheumatism or inflammation of the skin, inflammation of the stomach and gut, as well as for those suffering from sciatica. Helpful in the treatment of influenza.

    Drink 10 ml of vinegar a day in a small glass of water.


    Store tightly corked in a cool, dark place. The vinegar may be kept in the fridge, but this is not required for its safe storage.

    Our living vinegar contains a culture of acetic bacteria which can cause the formation of a "mother of vinegar". This is a natural, safe and healthy process.  If a mother forms in your vinegar, you can simply strain it out before use.
