Live Rosehip Vinegar

It is only after the first frosts that we hand-harvest rosehips from the thorny bushes growing in the Dunajec River Valley in Southern Poland, and from them produce a live vinegar, using the two-stage Orleans method.  Rosehip vinegar has a clear, gold-honey colour and a slightly citrusy fragrance.

Unpasteurized, unfiltered, rich in probiotics.

In the kitchen

We recommend replacing lemon juice with rosehip vinegar in your salad dressings and marinades. Can be drizzled directly over fish. Perfect for salt herring.

It pairs well with honey, for example in sweet and sour sauces.  Can be used instead of rice vinegar in sushi. Its clean, citrus note emphasizes the taste of raw fish.

In the drinks cabinet

For cocktails made with dark rum, cognac, whisky or bourbon, especially with the addition of honey.  It can replace lime juice in mojitos.  Make a non-alcoholic hot toddy sweetened with honey, or a refreshing cold drink with honey, sparkling water and a sprig of mint or fresh lemon balm.

In the medicine cabinet

Every variety of Octovnia’s living vinegar has a beneficial effect on gut health, boosts immunity and improves well-being.  In addition, the vinegars are enriched with the specific properties of flowers, fruits and herbs from which they are made, well known in folk medicine and often used in modern herbal supplements.

Rosehips (Rosa canina  L. - Fructus) provide ample amounts of vitamin C, strengthen the immune system, treat colds and flu, soothe a sore throat, protect the blood system, strengthen blood vessels, lower blood pressure and have anti-inflammatory properties. Recommended for neuralgia.

Drink 10 ml of vinegar a day in a small glass of water.

Storage

Store tightly corked in a cool, dark place. The vinegar may be kept in the fridge, but this is not required for its safe storage.

Our living vinegar contains a culture of acetic bacteria which can cause the formation of a "mother of vinegar". This is a natural, safe and healthy process.  If a mother forms in your vinegar, you can simply strain it out before use.
