From 100% apple juice pressed from fruit from orchards in the Dunajec Valley in Southern Poland, we produce our own cider vinegar. We then infuse this pure, live vinegar with elderflower blossom, harvested from local meadows, far from any busy roads. The resulting vinegar is intensely fragrant with a light straw colour.
Unpasteurized, unfiltered, rich in probiotics.
Taste
Fresh, fruity and floral with a hint of lemon
In the kitchen
With spring lamb, with Gruyère or Mozzarella cheese. Add to egg whites to improve the flavour and structure of meringues. Pairs well with lemon, lime, strawberry, gooseberry, bilberry.
In the drinks cabinet
Add to sparkling white wine for a "Hugo" type cocktail (with simple sugar syrup and mint). In the non-alcoholic version replace wine with sparkling water.

Every variety of Octovnia’s living vinegar has a beneficial effect on gut health, boosts immunity and improves well-being. In addition, the vinegars are enriched with the specific properties of flowers, fruits and herbs from which they are made, well known in folk medicine and often used in modern herbal supplements.
Elderflowers (Sambucus nigra L. - Flos) help reduce fever, prevent water retention and have anti-inflammatory properties. They act as an expectorant. Known for their antiviral properties, they also strengthen immunity and boost the metabolism.
Drink 10 ml of vinegar a day in a small glass of water.
Storage
Store tightly corked in a cool, dark place. The vinegar may be kept in the fridge, but this is not required for its safe storage.
Our living vinegar contains a culture of acetic bacteria which can cause the formation of a "mother of vinegar". This is a natural, safe and healthy process. If a mother forms in your vinegar, you can simply strain it out before use.
