We produce our own cider vinegar from 100% pure apple juice pressed from fruit gathered in the orchards of the Dunajec River Valley in Southern Poland. In this pure, live vinegar we infuse hibiscus flowers to get a distinct vinegar with an intensely red colour and fruity, cranberry aroma.
Unpasteurized, unfiltered, rich in probiotics.

In the kitchen
Use in any recipe which requires a red wine vinegar. Because of its high tannin content, it is an ideal vinegar for marinading meats, especially lamb, mutton or beef. Its intense colour will add a new dimension to the look of your dishes. Added to beaten egg whites, it will not only improve the structure, but will also give a natural, slightly pink hue to meringue.
The taste of hibiscus pairs well with ginger, cinnamon, mint, honey and citrus fruits (especially oranges).
In the drinks cabinet
For cocktails based on vodka, gin, white rum (e.g., Margarita), for punch or sangria. Add a little to sparkling white wine. Add to a non-alcoholic cocktail based on sparkling water, simple sugar syrup, fresh raspberries and mint. It can also be served warm with water, honey and orange slices.
In the medicine cabinet
Every variety of Octovnia’s living vinegar has a beneficial effect on gut health, boosts immunity and improves well-being. In addition, the vinegars are enriched with the specific properties of flowers, fruits and herbs from which they are made, well known in folk medicine and often used in modern herbal supplements.
Hibiscus (Hibiscus L.) supports the immune system and also has anti-inflammatory properties. Reputed to reduce fever, ease coughing, strengthen the heart and circulatory system. High in antioxidants, it may be helpful in lowering “bad” cholesterol levels.
Drink 10 ml of vinegar a day in a small glass of water.
Storage
Store tightly corked in a cool, dark place. The vinegar may be kept in the fridge, but this is not required for its safe storage.
Our living vinegar contains a culture of acetic bacteria which can cause the formation of a "mother of vinegar". This is a natural, safe and healthy process. If a mother forms in your vinegar, you can simply strain it out before use.
